Caesar-in-Seconds

From the Oxbow archives

  • 1 egg yolk
  • 1 T Dijon
  • 1 dash Worcestershire
  • salt and pepper, to taste
  • 4 anchovies
  • 3 garlic cloves, smashed
  • 1/3 C freshly grated Parmesan
  • 1 C olive oil
  • 1 lemon (juice only)

Put all ingredients in a food processor, except lemon juice and process for 15 seconds. Slowly add lemon juice, and more oil if needed.

Pour over freshly harvested Jericho romaine, roughly torn. Top with additional Parmesan and fresh, crisp croutons.
