Caesar-in-Seconds

  • 1 egg yolk
  • 1 T Dijon
  • 1 dash Worcestershire
  • salt and pepper, to taste
  • 4 anchovies
  • 3 garlic cloves, smashed
  • 1/3 C freshly grated Parmesan
  • 1 C olive oil
  • 1 lemon (juice only)

  • Put all ingredients in a food processor, except lemon juice and process for 15 seconds. Slowly add lemon juice, and more oil if needed.

  • Pour over freshly harvested Jericho romaine, roughly torn. Top with additional Parmesan and fresh, crisp croutons.
