Radish Raita

This is a great spin on a traditional Indian raita and is a great condiment for roasted veggies, fish or meat. From Winter Harvest Cookbook by Lane Morgan

  • 1 C grated radish
  • 2 tsp salt
  • 2 C plain yogurt
  • 1/8 tsp ground cumin
  • pinch cayenne

  • Put grated radish in a bowl, add salt and knead to squeeze out excess water.

  • In another bowl, beat yogurt with a fork until smooth. Add radish and cumin and mix well. Sprinkle with cayenne and refrigerate until time to serve.
