Ruth’s Refrigerator Pickles

These delicious pickles are super simple and better than anything you can purchase. Great with pickling cukes, but also good with your divas or lemon cukes. This recipe will give you the general proportions for the pickling brine for you to adjust as needed… depending on how many cukes you want to pickle.


  • Cucumbers, sliced
  • Onion, sliced
  • 4 C Vinegar
  • 4 C Sugar
  • 1/4 C Coarse salt
  • 1 tsp Mustard seeds
  • 1 tsp Celery seeds
  • 1/2 tsp Turmeric

  • Place sliced onions in the bottom of your jar. Add sliced unpeeled cucumbers on top. In a small pot add all the brine ingredients and dissolve the salt and sugar thoroughly. Pour over the cucumbers and onions and refrigerate. Your pickles will be ready to serve the next day and will keep for a long while in the fridge (if they last that long).
