Braised Cabbage w/ Bacon & Apples
I love apples w/ onions in savory dishes. The apples add sweetness, depth and an interesting texture. Plus, the apple makes this dish more inviting for my 3 year old. From my kitchen.
- 1 head cabbage, any variety
- 4 slices bacon, diced
- 1 large onion, diced
- 1 apple, peeled, cored & cut into large bite-sized pieces
- 1/2 C homemade stock or water
- heavy pinch of allspice
- sea salt & freshly ground pepper
- 1 T sherry vinegar
Cut the cabbage heads in half and then in quarters. With an angled cut remove the core and cut each quarter into large pieces, approx. 1”.
In a large sauté pan cook the diced bacon over medium heat until starting to crisp. Drain all but 2 T of the fat.
Add onion and sauté until translucent and starting to brown. Add the apple and cook for a few minutes. Add a little water if the mixture is starting to stick.
Season with salt, pepper and allspice and stir to combine. Add the stock /water and the cabbage, cover and let braise for about 20 minutes stirring occasionally. Season with sherry vinegar and more salt & pepper if needed. Serve immediately.
