Fresh & Delicious Pea Vine Pesto

This fresh tasting pesto would be great with so many things! I served it with cooked pasta and dotted it with cubes of fresh mozzarella. Other ideas: ~ Top grilled fish or steak ~ Swirl into your hummus or mashed potatoes ~ Add to your pizza or roasted veggies. Enjoy
- 1 bunch Pea Vines
- 1 clove Garlic (or 1-2 garlic scapes)
- 1/3 C Parmesan cheese, grated
- 1/3 C Olive oil
- 1/4 C raw or toasted walnuts (or pinenuts)
- Salt to taste
Place the pea vines, garlic, cheese, olive oil, nuts and salt in a food processor or blender, pulse until a thick paste forms.
