Insanely Delicious Greens

This recipe is a longtime Oxbow favorite and will inspire just about anyone to eat their greens!
- 1 Onion (or 2 small onions, chopped
- 1 Thumb-sized piece of fresh ginger, grated
- 2-3 Spring garlic or garlic Q’s (spring scapes), chopped
- 1/2 C Raw almonds, chopped
- 1 bunch Kale, collards, or chard, ribs removed & coarsley chopped
- 2 T Soy sauce or tamari (we prefer tamari)
- 2 T Rice vinegar
- 2 T Olive or organic canola oil
- 1-2 tsp Toasted sesame oil
In a heated skillet over medium heat, warm the oil and add chopped almonds; sauté til toasted.
Add onion, garlic, and ginger next, and sauté for 2-3 minutes. Add greens, stems and all (you can add the chopped stems a minute or two before the greens if you want) and cook 5-10 minutes (shorter for chard; longer for collards or kale) til coated in oil and brilliant green.
Add soy sauce or tamari and the vinegar and cook for a minute more, til all is combined and the greens are tender but not brown. Serve over rice or as a side dish.
