Pomegranate Vinaigrette

This is dressing is great for a simple salad with feta & roasted pumpkin seeds.
- 2 T Pomegranate molasses
- 2 T Red wine or cider vinegar
- 1 tsp Dijon mustard
- 1/3-1/2 C Extra virgin olive oil or walnut oil
- Freshly ground pepper, to taste
Combine all ingredients in a small jar with a tight fitting lid. Put on lid and shake vigorously until emulsified. Taste and add more molasses, oil or vinegar to suit your fancy.
