Radish Raita

This is a great spin on a traditional Indian raita and is a great condiment for roasted veggies, fish or meat. From Winter Harvest Cookbook by Lane Morgan
- 1 C grated radish
- 2 tsp salt
- 2 C plain yogurt
- 1/8 tsp ground cumin
- pinch cayenne
Put grated radish in a bowl, add salt and knead to squeeze out excess water.
In another bowl, beat yogurt with a fork until smooth. Add radish and cumin and mix well. Sprinkle with cayenne and refrigerate until time to serve.
