Sherry Dijon Vinaigrette

This is a favorite dressing I use every day. It’s excellent on grilled romaine. Or for a simple butterhead salad w/ toasted nuts and maybe some shaved carrot for crunch.


  • 2 T sherry vinegar
  • 1 T Dijon mustard
  • 1-2 tsp minced shallot (optional)
  • 1/3 – 1/2 C walnut or extra-virgin olive oil
  • freshly ground pepper, to taste

Combine all ingredients in a small jar with a tight fitting lid. Put on lid and shake vigorously until emulsified.
